We all liked mummy's pancakes and it was always a saviour when you suddenly realised that you do not have enough to go round for breakfast. Luckily, we always had flour, sugar, egg and milk at home so making pancakes was easy and welcomed.
On several occasions, banana was available and we enjoyed it even better. WE would just mash the banana into the pancake mix. When we had nutmeg, raisins or mixed fruits, we would just sprinkle them over the mix and have a more interesting banana fritters. I suggest you reduce the quantity of sugar you are adding as ripe banana is naturally sweet. You can further enjoy this with salted butter, jam or marmalade. Bon Appetite!
